Ingredients

  • 1/2 cup Pesto
  • 1 small English cucumber, diced (about 1 heaping cup)
  • 1/2 cup red onion, diced
  • 1 pint cherry tomatoes, halved or quartered
  • 1/4 cup kalamata olives, quartered
  • 1/3 cup feta cheese, cubed or crumbled

Instructions

  1. 1. Cook orzo according to package instructions, then drain and rinse with cold water.
  2. 2. Dice the cucumber and onion, halve the tomatoes, and quarter the olives.
  3. 3. Cube or crumble the feta cheese if needed.
  4. 4. In a large bowl, combine the cooled orzo, vegetables, pesto, and cheese, stirring gently to combine.
