Lemon Arugula Pizza

Ingredients

Pizza Dough

  • 2 ¼ teaspoons rapid rise yeast
  • 1 cup warm water
  • a pinch sugar
  • 3 ½ cups Gold Medal Better For Bread Flour
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • as needed corn meal (for spreading on pizza peel)

Pizza Toppings

  • 1 tablespoon olive oil
  • 6 ounces fresh mozzarella (sliced)
  • ½ cup Parmesan cheese (shredded)
  • 2 cups arugula
  • 2 tablespoons fresh lemon juice
  • to taste salt and pepper
  • as desired additional shredded parmesan cheese (for serving)

Instructions

  1. Make the pizza dough by combining yeast, warm water, and sugar; let it sit for 5 minutes.
  2. In a stand mixer, mix flour and salt, then add the yeast mixture and olive oil, mixing until combined.
  3. Knead the dough with a dough hook for about 5 minutes.
  4. Place the dough in a greased bowl, cover it, and let it rise in a warm area for 1 hour.
  5. Preheat the oven to 450°F. Divide the dough and roll out one piece into a circle.
  6. Brush olive oil on the dough, then top with mozzarella and parmesan cheese.
  7. Bake the pizza for 12-15 minutes until the crust is golden and the cheese is melted.
  8. Remove from the oven, top with arugula, lemon juice, and season with salt and pepper.
  9. Garnish with additional parmesan cheese if desired, slice, and serve.
