Instructions
- Make the pizza dough by combining yeast, warm water, and sugar; let it sit for 5 minutes.
- In a stand mixer, mix flour and salt, then add the yeast mixture and olive oil, mixing until combined.
- Knead the dough with a dough hook for about 5 minutes.
- Place the dough in a greased bowl, cover it, and let it rise in a warm area for 1 hour.
- Preheat the oven to 450°F. Divide the dough and roll out one piece into a circle.
- Brush olive oil on the dough, then top with mozzarella and parmesan cheese.
- Bake the pizza for 12-15 minutes until the crust is golden and the cheese is melted.
- Remove from the oven, top with arugula, lemon juice, and season with salt and pepper.
- Garnish with additional parmesan cheese if desired, slice, and serve.
