Roasted Asparagus and Arugula Pizza

Ingredients

The veggies

  • ½ pound asparagus
  • ½ small red onion
  • 1 tablespoon olive oil
  • 1 large clove garlic
  • ¼ teaspoon salt
  • a pinch crushed red pepper flakes

The pizza

  • 1 pound refrigerated pizza dough
  • 1 tablespoon olive oil
  • 1 ½ cups shredded mozzarella cheese
  • 2 ounces goat cheese
  • 1 medium lemon zest
  • 1 cup baby arugula

Instructions

  1. Preheat the oven to 400ºF.
  2. Combine asparagus and red onion on a baking sheet, drizzle with olive oil, and sprinkle with garlic, salt, and red pepper flakes.
  3. Toss to combine and bake for 10 to 12 minutes until crisp tender, then set aside to cool slightly.
  4. Increase the oven temperature to 500ºF and heat a pizza stone if using.
  5. Roll out the pizza dough on a floured surface and transfer to parchment dusted with cornmeal.
  6. Brush the dough with olive oil and top with mozzarella, goat cheese, and roasted veggies.
  7. Bake for 10 to 13 minutes until the crust is golden brown.
  8. Remove from the oven, sprinkle with lemon zest, and top with arugula.
  9. Let cool for 5 minutes before slicing.
