Easy Vegan Lemon Bars

Ingredients

The crust

  • 1 cup flour
  • 2 tablespoons maple syrup
  • ¼ cup oil
  • 1 tablespoon extra oil (if needed)

The lemon filling

  • 1 cup raw unsalted cashews
  • ¾ cup coconut cream
  • 3 tablespoons cornstarch
  • ½ cup lemon juice
  • ¼ cup maple syrup
  • 1 tablespoon maple syrup (additional)
  • 2 teaspoons vanilla extract
  • teaspoon sea salt
  • ⅛ to ¼ teaspoon turmeric
  • 1 teaspoon lemon zest

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8x8 baking dish with parchment paper.
  2. Mix all crust ingredients until they stick together and press evenly into the baking dish.
  3. Bake the crust for 10 minutes and allow it to cool completely.
  4. In a blender, combine all lemon filling ingredients and blend until smooth.
  5. Pour the filling over the cooled crust and tap to remove bubbles.
  6. Bake for 23 to 25 minutes until the center is set.
  7. Cool on the counter for about an hour, then refrigerate for at least 4 hours before serving.
