Ingredients

The crust

  • 1 cup blanched almond flour
  • 2 Tablespoons melted coconut oil
  • 2 Tablespoons maple syrup
  • ¼ teaspoon salt

The filling

  • 1 cup whole cashews (not roasted or salted)
  • ½ cup lemon juice
  • 1 Tablespoon lemon zest
  • ½ cup maple syrup
  • ¼ cup melted coconut oil

Instructions

  1. Preheat the oven to 350ºF and grease an 8-inch baking dish, lining the bottom with parchment paper.
  2. In a bowl, mix almond flour, coconut oil, maple syrup, and salt until the dough sticks together.
  3. Press the crust mixture evenly into the bottom of the prepared baking dish.
  4. Bake the crust for 15 minutes until golden brown around the edges, then let it cool completely.
  5. For the filling, blend cashews until finely ground, then add lemon juice, zest, maple syrup, and melted coconut oil, blending until smooth.
  6. Pour the filling over the cooled crust and smooth the top.
  7. Freeze the bars for about 2 hours until firm.
  8. Once firm, slice into 16 pieces and serve chilled.
