Vegan Lemon Bars

Instructions
- Preheat the oven to 350ºF and grease an 8-inch baking dish, lining the bottom with parchment paper.
- In a bowl, mix almond flour, coconut oil, maple syrup, and salt until the dough sticks together.
- Press the crust mixture evenly into the bottom of the prepared baking dish.
- Bake the crust for 15 minutes until golden brown around the edges, then let it cool completely.
- For the filling, blend cashews until finely ground, then add lemon juice, zest, maple syrup, and melted coconut oil, blending until smooth.
- Pour the filling over the cooled crust and smooth the top.
- Freeze the bars for about 2 hours until firm.
- Once firm, slice into 16 pieces and serve chilled.
