Ingredients

  • 12 ounces potato bread cubes
  • 4 ounces butter
  • ½ medium onion, diced
  • 3 stalks celery, diced
  • 8 ounces mushrooms, sliced (optional)
  • 3 cups chicken stock
  • teaspoons poultry seasoning

Instructions

  1. Preheat the oven to 350°F.
  2. Dice the celery and onion, and slice the mushrooms.
  3. Melt the butter in a saucepan and add the prepared vegetables, cooking for 3-4 minutes until soft.
  4. In a large mixing bowl, combine the potato bread cubes with the cooked vegetables and all the liquid from the pan.
  5. Add the chicken stock to the mixture, reserving half a cup to adjust the consistency later.
  6. Mix well, ensuring the stuffing is wet but not soggy.
  7. Transfer the stuffing to a baking dish, cover with non-stick foil, and bake for 75-90 minutes.
  8. For a crispy top, uncover the stuffing for the last 10 minutes of baking.
  9. Serve and enjoy!
