Instructions
- Preheat the oven to 350°F.
- Dice the celery and onion, and slice the mushrooms.
- Melt the butter in a saucepan and add the prepared vegetables, cooking for 3-4 minutes until soft.
- In a large mixing bowl, combine the potato bread cubes with the cooked vegetables and all the liquid from the pan.
- Add the chicken stock to the mixture, reserving half a cup to adjust the consistency later.
- Mix well, ensuring the stuffing is wet but not soggy.
- Transfer the stuffing to a baking dish, cover with non-stick foil, and bake for 75-90 minutes.
- For a crispy top, uncover the stuffing for the last 10 minutes of baking.
- Serve and enjoy!
