Ingredients

The salad

  • 8-10 medium ripe tomatoes, cut into 1 inch cubes
  • 1 cup seedless cucumber, diced
  • ½ medium red onion, chopped
  • 8-10 leaves basil, chopped
  • 1 tbsp extra virgin olive oil
  • to taste kosher salt
  • to taste fresh ground pepper

The bread

  • 6 oz French bread or good crusty Italian bread, sliced
  • as needed extra virgin olive oil spray

Instructions

  1. Spray the bread with olive oil and season with salt, then grill until toasted and browned.
  2. Remove the bread from heat and cut it into 1 inch cubes.
  3. In a large bowl, combine the tomatoes, cucumber, red onion, basil, and olive oil, seasoning with salt and pepper.
  4. Let the mixture sit for about 30 minutes to allow flavors to meld.
  5. Add the bread cubes to the salad and toss gently.
  6. Serve in individual bowls.
