Vegan Peanut Butter Mousse

Ingredients

  • 1 14-oz can full-fat coconut milk
  • 2-4 Tbsp salted, natural creamy peanut butter
  • 2-3 Tbsp agave nectar, maple syrup, or powdered sugar

Instructions

  1. Chill the coconut milk overnight.
  2. Scoop out the solid cream from the top of the coconut milk into a chilled bowl, leaving the liquid behind.
  3. Beat the coconut cream until light and fluffy.
  4. Add peanut butter to the whipped cream, starting with 2 Tbsp and adjusting to taste.
  5. Mix in your chosen sweetener to achieve desired sweetness.
  6. Use immediately as frosting or chill for several hours to set as mousse.
  7. Serve the mousse topped with coconut whipped cream, bananas, or chocolate sauce, or use as a dip.
