Ingredients

Marinade

  • ¼ cup olive oil
  • 3 tablespoons lemon juice
  • 3 cloves garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon turmeric
  • 4 pieces boneless skinless chicken thighs

Pita & Toppings

  • 1 small red onion
  • ¼ cup chicken broth or water
  • 4 loaves pita bread
  • 4-5 leaves romaine
  • 1 medium cucumber
  • 1 large tomato

Yogurt Sauce

  • 5-6 ounces plain Greek yogurt
  • 1 teaspoon lemon juice
  • 1 clove garlic
  • ¼ teaspoon salt
  • to taste pepper

Instructions

  1. Combine marinade ingredients and marinate chicken for at least 30 minutes.
  2. Mix yogurt sauce ingredients in a bowl until well combined.
  3. Heat a skillet and cook the marinated chicken until fully cooked and golden brown.
  4. Deglaze the pan with chicken broth or water and sauté onions in the drippings.
  5. Warm pita bread in the oven while onions cook.
  6. Slice chicken and assemble on pita with onions, romaine, tomatoes, cucumbers, and yogurt sauce.
