Ingredients

The Chicken

  • 2 pound boneless skinless chicken thighs
  • 3 teaspoon lemon juice
  • 2-3 clove garlic cloves, minced
  • 1 teaspoon white pepper
  • ½ teaspoon nutmeg
  • 1 teaspoon coriander
  • 1 teaspoon all spice
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • a pinch cayenne
  • 1 teaspoon salt
  • ½ cup yogurt
  • 1 teaspoon bouillon powder

The Sauce and Vegetables

  • ½ cup mayonnaise
  • ¼ cup pepper sauce
  • vegetables (lettuce, tomatoes, cucumber)

Instructions

  1. Combine pepper sauce and mayonnaise to make the spicy sauce and refrigerate if desired.
  2. Prepare the marinade by whisking together garlic, lemon juice, paprika, white pepper, coriander, allspice, bouillon, nutmeg, thyme, cayenne pepper, and yogurt in a medium bowl.
  3. Lightly salt the chicken and coat it with the marinade. Place it in a zip lock bag and marinate overnight in the refrigerator.
  4. Preheat a grill pan on medium-high heat. Remove the chicken from the marinade and grill for about 8-10 minutes on each side until fully cooked.
  5. Chop the grilled chicken into thin bite-sized pieces.
  6. Serve the chicken on flatbread or chapati, topped with spicy sauce and your choice of vegetables.
