Instructions
- Soak skewers in water if using.
- Mix all marinade ingredients in a bowl or pulse in a food processor to create a paste.
- Rub the marinade on the chicken and let it sit for at least 20 minutes, or up to 48 hours in the refrigerator.
- Grill the chicken on medium-high heat until grill marks appear, about 8 minutes per side.
- Finish cooking the chicken in a cooler part of the grill or in a 350°F oven until cooked through (170°F).
- Let the chicken rest for 10 minutes, then slice thinly.
