Ingredients

The Chicken

  • 2 lbs boneless, skinless chicken thighs

Shawarma Marinade

  • 2 tablespoons ground cumin
  • 2 tablespoons ground coriander
  • 8 cloves garlic, minced
  • 2 teaspoons kosher salt
  • 6 tablespoons olive oil
  • ¼ teaspoon cayenne pepper
  • 2 teaspoons turmeric
  • 1 teaspoon ground ginger
  • 1 teaspoon ground black pepper
  • 2 teaspoons allspice

Optional White Sauce

  • 1 clove garlic
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 2 tablespoons olive oil

Instructions

  1. Soak skewers in water if using.
  2. Mix all marinade ingredients in a bowl or pulse in a food processor to create a paste.
  3. Rub the marinade on the chicken and let it sit for at least 20 minutes, or up to 48 hours in the refrigerator.
  4. Grill the chicken on medium-high heat until grill marks appear, about 8 minutes per side.
  5. Finish cooking the chicken in a cooler part of the grill or in a 350°F oven until cooked through (170°F).
  6. Let the chicken rest for 10 minutes, then slice thinly.
