Ingredients

The bread

  • 1 ½ cups all-purpose flour
  • ½ teaspoon table salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup granulated sugar
  • 1 large lemon (zested)
  • 2 large eggs
  • 1 cup vegetable oil
  • 2 teaspoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup zucchini (grated)

The glaze

  • 1 cup confectioner's sugar
  • 4-5 teaspoons fresh lemon juice

Instructions

  1. Preheat the oven to 325°F.
  2. Grease and flour an 8 x 4 inch loaf pan and set aside.
  3. Rinse and pat dry the zucchini, then grate it without squeezing out the moisture.
  4. In a large bowl, whisk together the flour, salt, baking powder, and baking soda.
  5. In another bowl, combine the sugar and lemon zest, rubbing them together until fragrant.
  6. Add the eggs, vegetable oil, lemon juice, and vanilla to the sugar mixture and whisk until smooth.
  7. Stir the dry ingredients into the wet mixture until just combined; the batter will be thick.
  8. Fold in the grated zucchini until just mixed.
  9. Pour the batter into the prepared loaf pan and bake for 60-65 minutes, or until a toothpick comes out clean.
  10. Let the bread cool in the pan for 15 minutes, then remove it and cool completely on a wire rack.
  11. For the glaze, whisk together the confectioner's sugar and lemon juice until smooth, then drizzle over the cooled bread.
