Instructions
- Preheat the oven to 350°F and grease a 9x5-inch loaf pan.
- In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, lemon zest, and salt.
- In a large bowl, combine the wet ingredients: eggs, sugar, melted butter, oil, vanilla extract, and grated zucchini, stirring until smooth.
- Add the dry ingredients to the wet ingredients and stir until just combined, being careful not to over mix.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10-15 minutes, then remove from the pan and allow to cool before slicing.
