Ingredients

Dry Ingredients

  • 2 cups all-purpose flour

  • ½ teaspoon baking soda
  • 1 tablespoon lemon zest
  • 1 teaspoon salt

Wet Ingredients

  • 2 large eggs
  • 1 cup granulated sugar
  • cup melted unsalted butter
  • 2 tablespoons vegetable or canola oil
  • 1 teaspoon vanilla extract
  • 2 cups fresh zucchini, grated

Instructions

  1. Preheat the oven to 350°F and grease a 9x5-inch loaf pan.
  2. In a medium bowl, whisk together the dry ingredients: flour, baking powder, baking soda, lemon zest, and salt.
  3. In a large bowl, combine the wet ingredients: eggs, sugar, melted butter, oil, vanilla extract, and grated zucchini, stirring until smooth.
  4. Add the dry ingredients to the wet ingredients and stir until just combined, being careful not to over mix.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10-15 minutes, then remove from the pan and allow to cool before slicing.
