Instructions
- Preheat the oven to 350°F and prepare a 9 by 5-inch loaf pan.
- In a bowl, whisk together the flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
- In another bowl, mix the brown sugar, vegetable oil, eggs, and vanilla extract.
- Strain the shredded zucchini to remove excess liquid.
- Stir the zucchini into the brown sugar mixture.
- Combine the dry ingredients with the wet ingredients until just mixed.
- Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
