Ingredients

  • 2 cups all-purpose flour
  • tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¾ tsp salt
  • 1 cup light brown sugar
  • ¼ cup vegetable oil
  • 2 large eggs
  • 1 Tbsp vanilla extract
  • 20 oz. zucchini

Instructions

  1. Preheat the oven to 350°F and prepare a 9 by 5-inch loaf pan.
  2. In a bowl, whisk together the flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
  3. In another bowl, mix the brown sugar, vegetable oil, eggs, and vanilla extract.
  4. Strain the shredded zucchini to remove excess liquid.
  5. Stir the zucchini into the brown sugar mixture.
  6. Combine the dry ingredients with the wet ingredients until just mixed.
  7. Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes.
  8. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
