Green Gazpacho

Ingredients

  • 2 medium cucumbers
  • 1 medium white onion
  • 1 medium green bell pepper
  • 1 clove garlic
  • 1 medium avocado
  • ¼ bunch fresh parsley
  • ¼ bunch fresh cilantro
  • 2 Tbsp olive oil
  • 1 tsp salt
  • 1 Tbsp lemon juice
  • 1 cup water

Instructions

  1. Prepare the cucumbers by removing the ends, slicing them in half lengthwise, and scraping out the seeds. Chop into chunks.
  2. Remove the seeds from the bell pepper and chop it into chunks. Dice the onion.
  3. Add the cucumber, bell pepper, onion, and peeled garlic to a food processor and process until minced.
  4. Pull the leaves from about ¼ of the parsley and cilantro bunches and add them to the food processor along with the olive oil and avocado flesh. Purée until smooth.
  5. Add the water, lemon juice, and salt to the mixture and purée again until smooth. Adjust salt or lemon juice to taste.
  6. Serve immediately or chill in the fridge until ready to eat.
