Instructions
- Prepare the cucumbers by removing the ends, slicing them in half lengthwise, and scraping out the seeds. Chop into chunks.
- Remove the seeds from the bell pepper and chop it into chunks. Dice the onion.
- Add the cucumber, bell pepper, onion, and peeled garlic to a food processor and process until minced.
- Pull the leaves from about ¼ of the parsley and cilantro bunches and add them to the food processor along with the olive oil and avocado flesh. Purée until smooth.
- Add the water, lemon juice, and salt to the mixture and purée again until smooth. Adjust salt or lemon juice to taste.
- Serve immediately or chill in the fridge until ready to eat.
