Ingredients

Jade Rice

  • 2 cups cooked jade rice

Roasted Green Vegetables

  • 1 pound fresh brussels sprouts
  • 1 package (12-ounce) frozen edamame
  • 1 tablespoon sesame oil
  • 1 tablespoon light, gluten-free soy sauce
  • 1 inch fresh ginger root
  • 1 clove garlic

Toppings

  • 1 each avocado
  • 4 cups chopped kale
  • ¼ cup chopped cilantro
  • 2 each green onions

Spicy Peanut Dressing

  • 3 tablespoons creamy, natural peanut butter
  • 3 tablespoons coconut milk beverage
  • 1 tablespoon hot water
  • 1 teaspoon agave syrup
  • 1 tablespoon light, gluten-free soy sauce
  • 1 inch fresh ginger root
  • 1 clove garlic
  • 1 teaspoon vegetarian Thai green curry paste

Instructions

  1. Cook jade rice according to package directions and set aside.
  2. Preheat the oven to 375°F.
  3. Prepare the roasted green vegetables by placing halved brussels sprouts and thawed edamame on a baking sheet.
  4. Mix sesame oil, soy sauce, ginger, and garlic in a small dish, then drizzle over the vegetables and toss to coat.
  5. Roast the vegetables in the oven for about 20-22 minutes until golden brown and tender, then remove and set aside.
  6. Prepare the spicy peanut dressing by whisking together peanut butter, coconut milk, hot water, agave, and soy sauce until smooth, then stir in ginger, garlic, and curry paste.
  7. Assemble each bowl with ½ cup of cooked jade rice, 1 ½ cups of roasted green vegetables, 1 cup of chopped kale, ¼ avocado, 1 tablespoon cilantro, ½ green onion, and 2 tablespoons of spicy peanut sauce.
