Instructions
- Cook jade rice according to package directions and set aside.
- Preheat the oven to 375°F.
- Prepare the roasted green vegetables by placing halved brussels sprouts and thawed edamame on a baking sheet.
- Mix sesame oil, soy sauce, ginger, and garlic in a small dish, then drizzle over the vegetables and toss to coat.
- Roast the vegetables in the oven for about 20-22 minutes until golden brown and tender, then remove and set aside.
- Prepare the spicy peanut dressing by whisking together peanut butter, coconut milk, hot water, agave, and soy sauce until smooth, then stir in ginger, garlic, and curry paste.
- Assemble each bowl with ½ cup of cooked jade rice, 1 ½ cups of roasted green vegetables, 1 cup of chopped kale, ¼ avocado, 1 tablespoon cilantro, ½ green onion, and 2 tablespoons of spicy peanut sauce.
