Instructions
- Preheat the oven to 400°F.
- Trim the outer leaves of the Brussels sprouts and cut them in half, placing them on a baking sheet.
- Toss the Brussels sprouts with olive oil, garlic powder, chillies, ground ginger, salt, and pepper, ensuring they are evenly coated.
- Spread the halved Brussels sprouts on the baking sheet with the cut side facing down.
- Roast the Brussels sprouts for about 20 minutes until caramelized and tender.
- While the Brussels sprouts are roasting, prepare the peanut sauce by whisking together peanut butter, garlic, lime juice, maple syrup, Tamari, salt, pepper, and water in a bowl until smooth.
- With about 5 minutes left on the Brussels sprouts, boil water in a saucepan and add a pinch of salt and the frozen edamame, cooking for 2-3 minutes until bright green and tender.
- Drain the edamame and rinse with cold water.
- On a serving plate, place the drained edamame and drizzle with peanut sauce, then top with the crispy Brussels sprouts and additional peanut sauce.
- Garnish with green onions, mint, and sesame seeds, and serve immediately.
