Ingredients

The main ingredients

  • 1.5 lbs. boneless skinless chicken thighs
  • 1 large sweet potato, chopped into half moons
  • 1 small head cauliflower, chopped
  • 1/2 medium onion, chopped
  • 1 head garlic, head sliced off

The seasoning and oils

  • 3 tablespoons olive oil
  • 1.5 tablespoons maple syrup
  • 1.5 teaspoons minced garlic
  • 1.5 tablespoons chicken seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons grated parmesan
  • 1 tablespoon chopped fresh thyme

Instructions

  1. Preheat the oven to 400ºF and prepare a baking sheet with nonstick cooking spray or olive oil.
  2. Mix olive oil, maple syrup, and minced garlic in a bowl and set aside.
  3. Season the chicken thighs with chicken seasoning and place them in the center of the baking sheet.
  4. Arrange cauliflower and onion on one side of the chicken, and sweet potato and garlic head on the other side.
  5. Drizzle the oil and maple mixture over the vegetables and toss to coat.
  6. Sprinkle salt, pepper, and garlic powder over the vegetables.
  7. Bake in the oven for 20 minutes, then toss the vegetables.
  8. Return to the oven and bake for an additional 15 minutes.
  9. Sprinkle parmesan over the vegetables and bake for 3 more minutes until melted.
