Sheet Pan Chicken and Veggies

Instructions
- Preheat the oven to 400ºF and prepare a baking sheet with nonstick cooking spray or olive oil.
- Mix olive oil, maple syrup, and minced garlic in a bowl and set aside.
- Season the chicken thighs with chicken seasoning and place them in the center of the baking sheet.
- Arrange cauliflower and onion on one side of the chicken, and sweet potato and garlic head on the other side.
- Drizzle the oil and maple mixture over the vegetables and toss to coat.
- Sprinkle salt, pepper, and garlic powder over the vegetables.
- Bake in the oven for 20 minutes, then toss the vegetables.
- Return to the oven and bake for an additional 15 minutes.
- Sprinkle parmesan over the vegetables and bake for 3 more minutes until melted.
