The base

  • 4 cups cooked spaghetti squash

The toppings

  • ½ Tbsp chili powder
  • to taste N/A salt
  • 1 15 oz can black beans
  • 1 cup salsa
  • 4 oz Monterey jack cheese
  • 2 N/A green onions

Instructions

  1. Combine the cooked spaghetti squash with chili powder and salt in a bowl, tossing to coat evenly.
  2. Drain the black beans, shred the cheese, and slice the green onions.
  3. Divide the seasoned spaghetti squash into four bowls.
  4. Add 1/3 cup of black beans and 1/4 cup of salsa to each bowl.
  5. Top each bowl with shredded cheese and sliced green onions.
  6. Refrigerate until ready to eat and reheat in the microwave before serving.
