Instant Pot Curry Goat

Instructions
- Season the goat meat with 2 tablespoons of curry, salt, and pepper, and set aside.
- Use the 'Saute' function on the Instant Pot to heat oil and brown the goat meat in batches, then set aside.
- Add the onions, garlic, ginger, green onions, and thyme to the pot and stir for about a minute.
- Add the remaining curry and stir for 1-2 minutes.
- Pour in the water or meat broth and deglaze the pot thoroughly.
- Stir in the tomato paste, then add the browned meat, potatoes, scotch bonnet pepper, bouillon powder, salt, and pepper.
- Close the Instant Pot and set the knob to seal. Pressure cook on high for 30 minutes.
- Allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.
- Set the Instant Pot back to 'Saute' to thicken the soup to your desired consistency, adjusting with water or stock as needed.
