Ingredients

  • 2 - 2 ½ pounds goat meat (cut in chunks)
  • ¼ cup cooking oil
  • 1 medium sliced onion
  • 2 teaspoons minced garlic
  • 1-2 teaspoons minced ginger
  • 2 sliced green onions
  • 1-2 teaspoons fresh thyme
  • 4-5 tablespoons curry powder
  • 2 cups water or meat broth
  • 1 tablespoon tomato paste
  • 3 medium potatoes
  • 1 whole scotch bonnet pepper
  • 1 tablespoon bouillon powder (optional)
  • to taste salt
  • 1 teaspoon white pepper
  • for garnish parsley

Instructions

  1. Season the goat meat with 2 tablespoons of curry, salt, and pepper, and set aside.
  2. Use the 'Saute' function on the Instant Pot to heat oil and brown the goat meat in batches, then set aside.
  3. Add the onions, garlic, ginger, green onions, and thyme to the pot and stir for about a minute.
  4. Add the remaining curry and stir for 1-2 minutes.
  5. Pour in the water or meat broth and deglaze the pot thoroughly.
  6. Stir in the tomato paste, then add the browned meat, potatoes, scotch bonnet pepper, bouillon powder, salt, and pepper.
  7. Close the Instant Pot and set the knob to seal. Pressure cook on high for 30 minutes.
  8. Allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.
  9. Set the Instant Pot back to 'Saute' to thicken the soup to your desired consistency, adjusting with water or stock as needed.
