Jamaican Curry Goat

Instructions
- 1. Season the goat meat with salt and pepper, then set aside.
- 2. In a large pot, heat the cooking oil over medium heat until hot, then add the goat meat and sauté until browned.
- 3. Add the curry powder and stir for 1-2 minutes.
- 4. Incorporate the garlic, ginger, white pepper, onions, thyme, tomato paste, green onions, and scotch bonnet pepper, stirring for about a minute.
- 5. Pour in enough water to cover the goat meat, bring to a boil, and let it simmer until tender, about 2 hours or more, stirring occasionally and adding more water as needed.
- 6. About 15-20 minutes before finishing, add the potatoes and bouillon powder, cooking until the potatoes are tender.
- 7. Adjust the thickness of the curry with more water or stock if desired.
