Healthy Chicken Broccoli Cheddar Soup

Ingredients

  • 1.5 lbs boneless skinless chicken breast
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 medium yellow onion, diced
  • 2 large carrots, diced
  • 2 tbsp all-purpose flour (optional)
  • ¾ cup 2% milk
  • 1 large broccoli head (about 4-5 cups)
  • 1 small cauliflower head (about 3 cups)
  • 3-4 cups chicken broth
  • ¾ tsp salt
  • ¼ tsp black pepper
  • 8 oz sharp cheddar cheese, shredded

Instructions

  1. Heat 1 tbsp of olive oil in a large pot and cook the chicken breast until cooked through, about 3-4 minutes on each side. Season with salt and pepper.
  2. Remove the chicken, shred it, and set aside.
  3. In the same pot, heat another tbsp of oil and sauté the onion, garlic, and carrots for 2-3 minutes.
  4. Add the broccoli and cauliflower, cover, and cook for 6-7 minutes, stirring occasionally.
  5. Add chicken broth, salt, and pepper, bring to a boil, then reduce to a simmer for about 15 minutes.
  6. Slowly stir in the milk and bring back to a simmer.
  7. Gradually add the cheese, allowing it to melt into the broth.
  8. Remove from heat and blend the soup until about 75% blended, leaving some chunks.
  9. Return the shredded chicken to the pot and simmer for another 3-4 minutes until heated through.
  10. Serve topped with extra cheddar cheese and with crusty bread.
