Healthy Chicken Broccoli Cheddar Soup

Instructions
- Heat 1 tbsp of olive oil in a large pot and cook the chicken breast until cooked through, about 3-4 minutes on each side. Season with salt and pepper.
- Remove the chicken, shred it, and set aside.
- In the same pot, heat another tbsp of oil and sauté the onion, garlic, and carrots for 2-3 minutes.
- Add the broccoli and cauliflower, cover, and cook for 6-7 minutes, stirring occasionally.
- Add chicken broth, salt, and pepper, bring to a boil, then reduce to a simmer for about 15 minutes.
- Slowly stir in the milk and bring back to a simmer.
- Gradually add the cheese, allowing it to melt into the broth.
- Remove from heat and blend the soup until about 75% blended, leaving some chunks.
- Return the shredded chicken to the pot and simmer for another 3-4 minutes until heated through.
- Serve topped with extra cheddar cheese and with crusty bread.
