Ingredients

Baked Tortilla Chips

  • 16 pieces corn tortillas
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon fine-grain sea salt

Salsa Verde

  • 2 teaspoons extra-virgin olive oil
  • 3 cups salsa verde
  • 2 tablespoons chopped fresh cilantro

Toppings

  • 4 pieces fried eggs (optional)
  • 1 piece avocado, diced
  • cup crumbled Cotija, queso fresco or feta cheese
  • 3 tablespoons chopped red onion or green onion
  • 2 tablespoons chopped cilantro

Instructions

  1. Preheat the oven to 400°F and prepare baking sheets with parchment paper.
  2. Brush both sides of each tortilla with olive oil, stack and cut into wedges.
  3. Arrange the tortilla wedges on baking sheets, sprinkle with salt, and bake until golden.
  4. In a skillet, heat olive oil and add salsa verde, bringing it to a simmer.
  5. Stir in the baked tortilla chips and cilantro, then let it rest for a few minutes.
  6. Serve the chilaquiles topped with your choice of toppings.
