Instructions
- Preheat the oven to 400°F and prepare baking sheets with parchment paper.
- Brush both sides of each tortilla with olive oil, stack and cut into wedges.
- Arrange the tortilla wedges on baking sheets, sprinkle with salt, and bake until golden.
- In a skillet, heat olive oil and add salsa verde, bringing it to a simmer.
- Stir in the baked tortilla chips and cilantro, then let it rest for a few minutes.
- Serve the chilaquiles topped with your choice of toppings.
