Instructions
- Preheat the oven to 400°F (204°C) and prepare a nonstick wire rack on a lined baking sheet.
- Pound the chicken breasts to an even thickness and cut them into tenders, seasoning both sides with salt and pepper.
- Prepare three bowls: one with beaten eggs, one with coconut flour, and one with a mixture of coconut flakes, garlic powder, smoked paprika, salt, and pepper.
- Dredge each chicken strip in coconut flour, dip in the egg, and then roll in the coconut flakes before placing on the wire rack.
- Bake for 15-20 minutes, flipping halfway through, until cooked through and golden brown.
- Optionally, broil for an additional minute on each side for extra crispiness.
