Ingredients

The Chicken

  • 2 10-oz Boneless skinless chicken breasts
  • 1 tsp Sea salt
  • ¼ tsp Black pepper

The Coating

  • ¼ cup Wholesome Yum Coconut Flour
  • 2 large Eggs (beaten)
  • 1 cup Coconut flakes (unsweetened)
  • ¼ tsp Garlic powder
  • ¼ tsp Smoked paprika

Instructions

  1. Preheat the oven to 400°F (204°C) and prepare a nonstick wire rack on a lined baking sheet.
  2. Pound the chicken breasts to an even thickness and cut them into tenders, seasoning both sides with salt and pepper.
  3. Prepare three bowls: one with beaten eggs, one with coconut flour, and one with a mixture of coconut flakes, garlic powder, smoked paprika, salt, and pepper.
  4. Dredge each chicken strip in coconut flour, dip in the egg, and then roll in the coconut flakes before placing on the wire rack.
  5. Bake for 15-20 minutes, flipping halfway through, until cooked through and golden brown.
  6. Optionally, broil for an additional minute on each side for extra crispiness.
