Coconut Chicken Satay

Instructions
- 1. Preheat the oven broiler on high.
- 2. Soak skewers in water if desired.
- 3. Cut chicken breasts into strips and thread onto skewers.
- 4. Place skewers on a foil-lined baking sheet.
- 5. In a food processor, blend peanut butter, coconut milk, lime juice, vinegar, honey, garlic, jalapeño, and chili powder.
- 6. Set aside ¼ cup of the peanut mixture and brush it over the chicken skewers.
- 7. Broil chicken for 4-5 minutes, then turn skewers, add more peanut sauce, and broil for another 4-5 minutes until cooked through.
- 8. Drizzle remaining peanut sauce over the cooked chicken and sprinkle with toasted coconut before serving.
