Coconut Chicken Satay

Ingredients

  • 1 lb chicken breasts
  • ½ cup peanut butter
  • ½ cup coconut milk (unsweetened)
  • 1 tablespoon lime juice
  • 1 teaspoon lime juice (extra, freshly squeezed)
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon honey
  • 3 cloves garlic
  • ½ jalapeño (seeds and stem removed)
  • teaspoon chili powder
  • cup unsweetened coconut flakes (lightly toasted)

Instructions

  1. 1. Preheat the oven broiler on high.
  2. 2. Soak skewers in water if desired.
  3. 3. Cut chicken breasts into strips and thread onto skewers.
  4. 4. Place skewers on a foil-lined baking sheet.
  5. 5. In a food processor, blend peanut butter, coconut milk, lime juice, vinegar, honey, garlic, jalapeño, and chili powder.
  6. 6. Set aside ¼ cup of the peanut mixture and brush it over the chicken skewers.
  7. 7. Broil chicken for 4-5 minutes, then turn skewers, add more peanut sauce, and broil for another 4-5 minutes until cooked through.
  8. 8. Drizzle remaining peanut sauce over the cooked chicken and sprinkle with toasted coconut before serving.
