Grilled Chicken Satay Skewers

Ingredients

The skewers and sauce

  • 1 ½ cup coconut milk
  • 1 cup peanut butter
  • 2 tablespoon Thai fish sauce
  • 3 cloves garlic, minced
  • 2 tablespoon Sriracha hot sauce
  • 4 tablespoon fresh mint leaves
  • 4 tablespoon fresh lime juice
  • zest of 2 limes
  • 4 tablespoon rice vinegar

The chicken

  • 4 pieces chicken breasts, cut into strips

The skewers

  • as needed skewers, soaked in water for at least 30 minutes

Instructions

  1. Combine all ingredients except the chicken to make the sauce, reserving some for serving later.
  2. Let the chicken sit in half of the sauce for at least 15 minutes.
  3. Thread the chicken onto the skewers.
  4. Heat the grill to 350 degrees (medium).
  5. Grill the chicken for 2-3 minutes per side until the internal temperature reaches 165 degrees.
  6. Tent the meat for 5 minutes and serve with additional sauce.
