Ingredients

The chicken satay

  • cup coconut milk
  • 2 Tbsp soy sauce
  • 2 Tbsp fresh lime juice
  • 1 Tbsp fish sauce
  • 1 Tbsp packed brown sugar
  • 1 Tbsp peeled and minced ginger
  • 2 tsp minced garlic
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • ¾ tsp turmeric
  • 2 lbs boneless, skinless chicken breasts, cut into 1 ¼-inch cubes
  • to taste cilantro (for serving)

The peanut sauce

  • ½ cup creamy peanut butter
  • 2 Tbsp packed brown sugar
  • 2 Tbsp fresh lime juice
  • 1 ½ Tbsp soy sauce
  • 1 tsp minced garlic
  • ¼ cup coconut milk
  • 2 tsp sriracha
  • 2 Tbsp hot water (more as needed)

Instructions

  1. Whisk together the marinade ingredients in a bowl.
  2. Place chicken in a resealable bag, pour the marinade over it, seal the bag, and refrigerate for at least 1 hour.
  3. Preheat the grill to medium heat and clean the grates.
  4. Thread the marinated chicken onto skewers.
  5. Brush the grill grates with oil and grill the skewers until the chicken is cooked through, about 5-7 minutes per side.
  6. While the chicken is grilling, prepare the peanut sauce by whisking together all the sauce ingredients, adding water to achieve the desired consistency.
  7. Serve the chicken warm, garnished with cilantro, and with the peanut sauce for dipping.
