The peanut sauce

Instructions
- Whisk together the marinade ingredients in a bowl.
- Place chicken in a resealable bag, pour the marinade over it, seal the bag, and refrigerate for at least 1 hour.
- Preheat the grill to medium heat and clean the grates.
- Thread the marinated chicken onto skewers.
- Brush the grill grates with oil and grill the skewers until the chicken is cooked through, about 5-7 minutes per side.
- While the chicken is grilling, prepare the peanut sauce by whisking together all the sauce ingredients, adding water to achieve the desired consistency.
- Serve the chicken warm, garnished with cilantro, and with the peanut sauce for dipping.
