Ingredients

The chicken

  • lb boneless, skinless chicken breasts, cut into 1-inch cubes

The marinade

  • ¼ cup low sodium soy sauce
  • 2 tablespoons peanut butter
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 2 teaspoons sesame oil
  • 2 teaspoons honey
  • 2 teaspoons grated ginger
  • 2 cloves garlic, minced
  • ¼ teaspoon crushed red pepper
  • to taste salt and pepper

To serve

  • Peanut dipping sauce
  • Green onions
  • Chopped cilantro

Instructions

  1. Marinate the chicken by mixing the marinade ingredients and coating the chicken, then refrigerate for at least 30 minutes.
  2. Prepare the peanut dipping sauce while the chicken is marinating.
  3. Soak wooden skewers in warm water for 30 minutes if using, then thread the marinated chicken onto the skewers.
  4. Preheat the grill and cook the chicken skewers for 5 to 6 minutes on each side, brushing with reserved marinade until cooked through.
  5. Serve the skewers topped with cilantro and green onions, drizzled with peanut sauce.
