Authentic Satay Chicken

Ingredients

The chicken and marinade

  • 2 pounds chicken thighs, cubed
  • 2 pieces shallots, peeled
  • ½ piece white onion, chopped
  • 3 stalks lemongrass, trimmed
  • 1 teaspoon turmeric
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 2 tablespoons oil
  • 1 tablespoon soy sauce

The basting sauce

  • tablespoons peanut oil
  • 1 tablespoon coconut cream

To serve

  • ½ cup peanut sauce

Instructions

  1. Blend all marinade ingredients except the chicken in a food processor until a thick paste forms.
  2. Marinate the chicken by mixing it with the marinade in a bowl. Cover and refrigerate for at least 20 minutes or overnight.
  3. Thread 4-5 pieces of marinated chicken onto pre-soaked bamboo skewers.
  4. Prepare the basting sauce by whisking coconut cream with peanut oil.
  5. Preheat the grill or grill pan and cook the chicken satay for 2-3 minutes per side, basting as needed.
