Authentic Satay Chicken

The chicken and marinade

Instructions
- Blend all marinade ingredients except the chicken in a food processor until a thick paste forms.
- Marinate the chicken by mixing it with the marinade in a bowl. Cover and refrigerate for at least 20 minutes or overnight.
- Thread 4-5 pieces of marinated chicken onto pre-soaked bamboo skewers.
- Prepare the basting sauce by whisking coconut cream with peanut oil.
- Preheat the grill or grill pan and cook the chicken satay for 2-3 minutes per side, basting as needed.
