Instructions
- Whisk together the marinade ingredients in a bowl.
- Slice the chicken thighs into long, thin strips.
- Marinate the chicken in a plastic bag with the marinade for at least 1 hour.
- Soak the wooden skewers in cold water to prevent burning.
- Preheat the grill to medium-high heat.
- Thread the chicken onto the skewers and brush with olive oil.
- Grill the skewers for 3-5 minutes on each side until cooked through.
- Serve with optional peanut sauce, chopped peanuts, cilantro, and lime wedges.
