Zucchini Bread Oatmeal

Instructions
- In a pot, combine water or milk, cinnamon, nutmeg, salt, and oats; bring to a boil and simmer for about 4 minutes.
- Stir in grated zucchini, chia seeds, raisins, 1 tbsp brown sugar, and 1 tbsp pecans; cook for another 5-6 minutes, adding more liquid if needed.
- Remove from heat, stir in vanilla, and serve topped with remaining pecans, brown sugar, and Earth Balance.
