Instructions
- Heat olive oil in a large sauté pan over medium-high heat.
- Season the chicken with salt and pepper, then sear in the pan for 5 minutes on one side.
- Flip the chicken and sear for an additional 5 to 6 minutes until cooked through.
- Remove the chicken and let it cool before chopping into bite-sized pieces.
- Boil the pasta until al dente, about 8 minutes, then drain and return to the pot.
- Stir in the pesto, sun-dried tomatoes, and chopped chicken, seasoning with salt and pepper to taste.
- Serve warm or cold.
