Pesto Chicken

Ingredients

  • pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • 1 tablespoon butter
  • 1 teaspoon minced garlic
  • ¼ cup chicken broth
  • ½ cup basil pesto
  • 1 teaspoon lemon juice
  • ½ cup mozzarella cheese, shredded
  • 1 tablespoon chopped fresh parsley
  • 1 cup cherry tomatoes, halved
  • as needed cooking spray
  • as needed fresh basil or parsley sprigs for garnish

Instructions

  1. Preheat the oven to 400°F and season the chicken breasts with salt and pepper.
  2. Heat olive oil in a large pan over medium-high heat and cook the chicken for 3-5 minutes on each side until browned.
  3. Transfer the chicken to a baking dish coated with cooking spray.
  4. In a bowl, mix butter, garlic, chicken broth, pesto, and lemon juice, then pour over the chicken.
  5. Bake for 25 minutes or until the chicken is cooked through, checking that it reaches at least 165°F.
  6. Sprinkle mozzarella cheese over the chicken and broil for 3-4 minutes until melted and browned.
  7. Garnish with parsley and arrange the halved cherry tomatoes in the dish before serving.
