Pesto Chicken

Instructions
- Preheat the oven to 400°F and season the chicken breasts with salt and pepper.
- Heat olive oil in a large pan over medium-high heat and cook the chicken for 3-5 minutes on each side until browned.
- Transfer the chicken to a baking dish coated with cooking spray.
- In a bowl, mix butter, garlic, chicken broth, pesto, and lemon juice, then pour over the chicken.
- Bake for 25 minutes or until the chicken is cooked through, checking that it reaches at least 165°F.
- Sprinkle mozzarella cheese over the chicken and broil for 3-4 minutes until melted and browned.
- Garnish with parsley and arrange the halved cherry tomatoes in the dish before serving.
