Pesto Chicken Bake with Marinara and Mozzarella

Ingredients

The chicken

  • 2 pounds boneless skinless chicken breasts, cut into 2-inch cubes
  • to taste Salt and pepper

The sauce

  • ¼ to ½ cup pesto
  • 4 cups marinara sauce

The cheese

  • 8 slices thick mozzarella cheese or freshly grated mozzarella cheese, about 1 to 2 cups

For serving

  • Hot cooked noodles (optional)

Instructions

  1. Preheat the oven to 400°F and grease a baking dish.
  2. Dry the chicken pieces and season with salt and pepper.
  3. Toss the chicken with pesto in the baking dish until evenly coated.
  4. Pour marinara sauce over the chicken and top with mozzarella.
  5. Cover with foil and bake for 15 minutes, then uncover and bake for an additional 10-15 minutes until cooked through.
  6. Serve over hot, cooked noodles if desired.
