Ingredients

The filling

  • 1 large egg
  • 1 cup fat free ricotta cheese
  • ¾ cup shredded 2% mozzarella cheese
  • 1 ½ - 2 tablespoons chopped fresh basil
  • 1 teaspoon dried parsley

The chicken

  • 4 (6 oz each) boneless, skinless chicken breasts
  • to taste Salt and black pepper
  • 1 teaspoon Italian seasoning

The sauce

  • 1 cup pasta sauce

Instructions

  1. Preheat the oven to 375°F and prepare a baking dish with cooking spray.
  2. Mix the egg, ricotta, ¼ cup mozzarella, basil, and parsley in a bowl.
  3. Season the chicken breasts with salt, pepper, and Italian seasoning, then slice them almost in half.
  4. Spread the ricotta mixture inside each chicken breast and fold them over.
  5. Place the stuffed chicken in the baking dish and pour pasta sauce over them.
  6. Bake for 25 minutes, then add the remaining mozzarella on top and bake for another 10 minutes until cooked through.
