Ingredients

The chicken

  • 4 large chicken breasts
  • ¼ cup olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp garlic powder
  • ¼ tsp red pepper flakes

The filling

  • 1 cup part skim ricotta cheese
  • ½ cup light mozzarella cheese
  • ½ cup grated parmesan cheese
  • 3 cloves garlic
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ tsp oregano
  • 1 5 oz bag spinach

Instructions

  1. Preheat the oven to 400°F.
  2. Butterfly each chicken breast, cutting about 4 inches deep but not all the way through.
  3. In a small bowl, mix olive oil, salt, pepper, garlic powder, and red pepper flakes.
  4. In a large bowl, combine ricotta, mozzarella, parmesan, garlic, salt, pepper, and oregano, then stir in wilted spinach.
  5. Stuff each chicken breast with about ¼ of the filling and secure with toothpicks if needed.
  6. Coat the outside of the chicken with the oil and spice mixture.
  7. Heat a large pan with 1 tbsp of oil over medium-high heat and sear the chicken for 3 minutes on each side.
  8. Transfer the pan to the oven and bake for 10-12 minutes until the internal temperature reaches 165°F.
