Easy Stuffed Chicken Breast

Instructions
- Preheat the oven to 400°F.
- Butterfly each chicken breast, cutting about 4 inches deep but not all the way through.
- In a small bowl, mix olive oil, salt, pepper, garlic powder, and red pepper flakes.
- In a large bowl, combine ricotta, mozzarella, parmesan, garlic, salt, pepper, and oregano, then stir in wilted spinach.
- Stuff each chicken breast with about ¼ of the filling and secure with toothpicks if needed.
- Coat the outside of the chicken with the oil and spice mixture.
- Heat a large pan with 1 tbsp of oil over medium-high heat and sear the chicken for 3 minutes on each side.
- Transfer the pan to the oven and bake for 10-12 minutes until the internal temperature reaches 165°F.
