Instructions
- Preheat the oven to 375ºF.
- Mix garlic powder, salt, and pepper in a small bowl to create a spice rub.
- Slice the chicken breasts in half lengthwise, creating a flap, and season with the spice rub.
- Heat olive oil in a skillet and sauté the onion for 4-5 minutes, then add spinach and cook until wilted.
- Transfer the spinach mixture to a bowl and let cool for 10 minutes, then mix in cream cheese.
- Stuff each chicken breast with the spinach mixture and secure with toothpicks.
- Sear the stuffed chicken breasts in a skillet for 2-3 minutes on each side.
- Bake the seared chicken in the oven for 20-30 minutes, ensuring the internal temperature reaches 165ºF.
- Let the chicken rest for at least 10 minutes before serving.
