Ingredients

  • 1 teaspoon pepper

The stuffing

  • ½ medium white onion
  • 5 oz. fresh spinach
  • 6 oz. cream cheese

Instructions

  1. Preheat the oven to 375ºF.
  2. Mix garlic powder, salt, and pepper in a small bowl to create a spice rub.
  3. Slice the chicken breasts in half lengthwise, creating a flap, and season with the spice rub.
  4. Heat olive oil in a skillet and sauté the onion for 4-5 minutes, then add spinach and cook until wilted.
  5. Transfer the spinach mixture to a bowl and let cool for 10 minutes, then mix in cream cheese.
  6. Stuff each chicken breast with the spinach mixture and secure with toothpicks.
  7. Sear the stuffed chicken breasts in a skillet for 2-3 minutes on each side.
  8. Bake the seared chicken in the oven for 20-30 minutes, ensuring the internal temperature reaches 165ºF.
  9. Let the chicken rest for at least 10 minutes before serving.
