Cheesy Spinach Stuffed Chicken Breast

The chicken

Instructions
- Split each chicken breast down the middle to create a pocket, being careful not to split completely.
- Season the inside and outside of the chicken.
- In a skillet, cook the spinach until it wilts, then cool for 10 minutes.
- Mix the cooled spinach with the remaining filling ingredients in a large bowl.
- Stuff the chicken with the spinach filling and secure with toothpicks.
- Cook the stuffed chicken in a skillet with olive oil on medium-high heat for 6 to 7 minutes on each side.
- Remove from heat, take out the toothpicks, and serve.
