Ingredients

Spinach & Cheese Filling

  • 2 tablespoons unsalted butter
  • 1 medium onion, diced
  • 1 tablespoon minced garlic
  • 1 teaspoon Creole seasoning
  • 4 cups baby spinach leaves
  • 1 teaspoon Worcestershire sauce
  • 2-4 ounces cream cheese, softened
  • ¼ cup grated Parmesan
  • ½ teaspoon salt

The Chicken

  • 3-4 pieces boneless chicken breasts
  • to taste salt and pepper
  • 1 teaspoon Italian seasoning (optional)
  • 1 teaspoon Creole seasoning (optional)
  • 1-2 tablespoons cooking oil

Instructions

  1. Prepare the filling by sautéing onion and garlic in melted butter until soft, then add Creole seasoning.
  2. Add spinach and cook until wilted, then stir in Worcestershire sauce, cream cheese, and Parmesan cheese. Mix well and set aside to cool.
  3. Preheat the oven to 375℉ (190℃).
  4. Season chicken breasts with salt and optional seasonings, then cut a pocket into each breast.
  5. Stuff each chicken breast with the spinach mixture and secure with toothpicks if desired.
  6. Heat oil in an oven-proof skillet over medium heat, then pan-sear the chicken for 3-4 minutes on each side until golden.
  7. Transfer the skillet to the oven and cook for 18-25 minutes until the chicken reaches an internal temperature of 160-165℉ (72-74℃).
  8. Let the chicken rest before serving, then remove toothpicks and serve with pan juices.
