Ingredients

The chicken

  • 4 small chicken breasts, skinless and boneless

  • ½ teaspoon pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon butter (for cooking)

The filling

  • 6 ounces cream cheese, softened
  • 2 tablespoons cream cheese, softened
  • cup parmesan cheese, grated
  • cup feta cheese
  • 1 cup baby spinach, chopped
  • ¼ cup sun-dried tomatoes, packed in oil

Instructions

  1. Butterfly the chicken breasts and season the outside with salt, pepper, and smoked paprika.
  2. In a small bowl, mix cream cheese, parmesan, feta, spinach, and sun-dried tomatoes to create the filling.
  3. Stuff the chicken breasts with the filling and secure with toothpicks.
  4. Heat a skillet over medium heat, add butter, and brown the chicken on all sides until it reaches an internal temperature of 165°F.
