Ingredients

The chicken

  • 16 oz boneless skinless chicken breast

The filling

  • 4 oz mozzarella cheese
  • ¼ cup fresh basil leaves
  • ¼ cup sun-dried tomatoes

Seasoning and oil

  • 1 tbsp olive oil
  • to taste salt
  • to taste pepper
  • 2 tbsp balsamic glaze

Instructions

  1. Preheat the oven to 375ºF and prepare a baking sheet with nonstick spray.
  2. Pound the chicken breasts to about ½-inch thickness.
  3. Season both sides of the chicken with salt and pepper.
  4. Place mozzarella, basil, and sun-dried tomatoes in the center of each chicken breast.
  5. Roll the chicken breasts tightly and secure with baker's twine.
  6. Drizzle olive oil over the stuffed chicken and place them on the baking sheet.
  7. Bake for 30-40 minutes until fully cooked.
