Ingredients

The chicken

  • 16 oz skinless chicken breasts

The bruschetta filling

  • 3 tablespoons balsamic vinegar
  • 3 cloves garlic
  • 1 medium tomato, diced
  • 2 teaspoons Italian seasoning
  • 2 tablespoons olive oil
  • 1 cup mozzarella cheese, shredded
  • 2 tablespoons fresh basil
  • ½ teaspoon paprika

Seasoning

  • to taste Montreal Chicken Seasoning
  • to taste salt
  • to taste pepper

Instructions

  1. Make slits in each chicken breast without cutting through.
  2. Season the chicken with Montreal seasoning, 1 teaspoon Italian seasoning, salt, and pepper.
  3. Grill the chicken until fully cooked.
  4. Preheat the oven to 375°F.
  5. Mix olive oil, 2 tablespoons balsamic vinegar, garlic, tomatoes, remaining Italian seasoning, and basil in a bowl.
  6. Stuff the bruschetta mixture into the slits of the chicken.
  7. Top with mozzarella cheese and sprinkle paprika over it.
  8. Place the chicken on a greased baking sheet and bake for 5 minutes until the cheese melts.
  9. Remove from the oven, let cool, cut in half, and serve.
