Instructions
- Make slits in each chicken breast without cutting through.
- Season the chicken with Montreal seasoning, 1 teaspoon Italian seasoning, salt, and pepper.
- Grill the chicken until fully cooked.
- Preheat the oven to 375°F.
- Mix olive oil, 2 tablespoons balsamic vinegar, garlic, tomatoes, remaining Italian seasoning, and basil in a bowl.
- Stuff the bruschetta mixture into the slits of the chicken.
- Top with mozzarella cheese and sprinkle paprika over it.
- Place the chicken on a greased baking sheet and bake for 5 minutes until the cheese melts.
- Remove from the oven, let cool, cut in half, and serve.
