Instructions
- Whisk together olive oil, balsamic vinegar, garlic, lemon juice, oregano, basil, salt, and pepper to make the marinade.
- Season the chicken with salt and pepper, then marinate it in the mixture for at least 1 hour or up to 12 hours.
- Prepare the bruschetta by mixing sliced tomatoes, minced garlic, olive oil, basil, salt, and pepper in a bowl.
- Heat a grill or grill pan and cook the marinated chicken for about 5 to 6 minutes per side until cooked through.
- Top each chicken breast with a slice of mozzarella cheese and let it melt.
- Spoon the bruschetta over the chicken and drizzle with balsamic glaze if desired. Serve immediately.
