Bruschetta Chicken

Ingredients

The chicken

  • 4 pieces thin cut boneless skinless chicken breasts
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 1 teaspoon Italian seasoning
  • ½ teaspoon pepper
  • 4 slices mozzarella cheese
  • 2 tablespoons balsamic glaze

The bruschetta topping

  • cups tomatoes, diced
  • ½ teaspoon garlic, finely minced
  • 1 tablespoon olive oil
  • ¼ cup thinly sliced basil leaves
  • to taste salt
  • to taste pepper
  • 2 tablespoons red onion, minced

Instructions

  1. Mix olive oil, lemon juice, salt, Italian seasoning, and pepper in a bowl or bag.
  2. Add chicken breasts and marinate for at least 30 minutes or up to 4 hours.
  3. Preheat the grill or grill pan to medium-high heat.
  4. Remove chicken from marinade and grill for 4-5 minutes on each side until cooked through.
  5. Place cheese slices on top of the chicken and cover the grill until melted, about 2-3 minutes.
  6. While chicken is cooking, combine tomatoes, garlic, olive oil, red onion, basil, salt, and pepper in a bowl.
  7. Let the bruschetta mixture stand for 10 minutes.
  8. Spoon the bruschetta mixture over the chicken and drizzle with balsamic glaze before serving.
