Instructions
- Combine all bruschetta topping ingredients in a small bowl and mix well.
- Preheat the grill to medium-high heat or the oven to 450°F (232°C).
- Brush both sides of the chicken breasts with olive oil and season with salt and pepper.
- Cook the chicken on the grill for 6-8 minutes per side or in the oven for 18-22 minutes, adding mozzarella in the last few minutes.
- Remove the chicken from heat and let it rest for 5-10 minutes.
- Spoon the tomato mixture evenly over the chicken and garnish with more fresh basil if desired.
