Ingredients

Bruschetta Topping

  • cups Cherry tomatoes (diced)
  • ½ cup Sun-dried tomatoes (chopped)
  • ¼ cup Fresh basil (chopped; plus more for garnish if desired)
  • 2 cloves Garlic (minced)
  • tbsp Olive oil
  • 1 tbsp Balsamic vinegar
  • tsp Sea salt (to taste)
  • tsp Black pepper (to taste)

Chicken

  • 4 8-oz Boneless skinless chicken breasts
  • 2 tbsp Olive oil
  • ½ tsp Sea salt
  • ¼ tsp Black pepper
  • 2 oz Fresh mozzarella cheese (sliced)

Instructions

  1. Combine all bruschetta topping ingredients in a small bowl and mix well.
  2. Preheat the grill to medium-high heat or the oven to 450°F (232°C).
  3. Brush both sides of the chicken breasts with olive oil and season with salt and pepper.
  4. Cook the chicken on the grill for 6-8 minutes per side or in the oven for 18-22 minutes, adding mozzarella in the last few minutes.
  5. Remove the chicken from heat and let it rest for 5-10 minutes.
  6. Spoon the tomato mixture evenly over the chicken and garnish with more fresh basil if desired.
