Instructions
- Rinse and pat the chicken breast dry, then cut into 4 to 5 equal pieces.
- In a small bowl, whisk together 4 tablespoons of olive oil, ½ lemon's juice, salt, pepper, and Italian seasoning.
- Marinate the chicken in the mixture for 30 minutes in the refrigerator.
- Heat a cast-iron skillet over high heat and add 1 tablespoon of olive oil.
- Cook the marinated chicken for 8 to 10 minutes on each side until charred.
- Prepare the tomato mixture by combining diced tomatoes, minced garlic, chopped basil, and the remaining lemon juice; season with salt and pepper.
- Top each chicken breast with mozzarella cheese and cook for an additional 2 to 3 minutes until melted.
- Serve the chicken with a spoonful of the tomato mixture and sprinkle with grated parmesan cheese.
