Bruschetta Chicken

Ingredients

The marinade

  • 1 ½ lb boneless skinless chicken breast
  • 5 tablespoons olive oil
  • Juice of 1 lemon lemon juice
  • to taste none salt
  • to taste none ground black pepper
  • 1 teaspoon Italian seasoning

The topping

  • 3 none vine-ripened tomatoes, diced
  • 2 cloves garlic, minced
  • Juice of ½ lemon lemon juice
  • 1 tablespoon freshly chopped basil
  • to taste none salt
  • to taste none ground black pepper
  • 4 slices mozzarella cheese
  • for serving none grated parmesan cheese

Instructions

  1. Rinse and pat the chicken breast dry, then cut into 4 to 5 equal pieces.
  2. In a small bowl, whisk together 4 tablespoons of olive oil, ½ lemon's juice, salt, pepper, and Italian seasoning.
  3. Marinate the chicken in the mixture for 30 minutes in the refrigerator.
  4. Heat a cast-iron skillet over high heat and add 1 tablespoon of olive oil.
  5. Cook the marinated chicken for 8 to 10 minutes on each side until charred.
  6. Prepare the tomato mixture by combining diced tomatoes, minced garlic, chopped basil, and the remaining lemon juice; season with salt and pepper.
  7. Top each chicken breast with mozzarella cheese and cook for an additional 2 to 3 minutes until melted.
  8. Serve the chicken with a spoonful of the tomato mixture and sprinkle with grated parmesan cheese.
