Instructions
- Season the chicken with salt and pepper.
- Heat oil in a large skillet over medium-high heat until shimmering.
- Cook the chicken in a single layer until golden brown on one side, about 6 minutes.
- Flip the chicken, add water, and cover, cooking until the internal temperature reaches 165°F, about 4 to 5 minutes.
- Transfer the chicken to a plate and tent with foil.
- Add balsamic vinegar and garlic to the skillet, stirring until fragrant.
- Add the tomatoes, bring to a boil, then reduce heat and simmer until softened, about 5 to 7 minutes.
- Stir in the basil and season to taste with salt and pepper.
- Return the chicken to the skillet, nestling it among the tomatoes, and top with mozzarella.
- Cover until the cheese is melted, about 30 seconds.
