Ingredients

The chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 ½ pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup water

The sauce

  • ¼ cup balsamic vinegar
  • 2 cloves garlic, minced
  • 1 pint grape tomatoes, halved
  • 2 tablespoons fresh basil leaves, torn
  • 4 slices mozzarella cheese

Instructions

  1. Season the chicken with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat until shimmering.
  3. Cook the chicken in a single layer until golden brown on one side, about 6 minutes.
  4. Flip the chicken, add water, and cover, cooking until the internal temperature reaches 165°F, about 4 to 5 minutes.
  5. Transfer the chicken to a plate and tent with foil.
  6. Add balsamic vinegar and garlic to the skillet, stirring until fragrant.
  7. Add the tomatoes, bring to a boil, then reduce heat and simmer until softened, about 5 to 7 minutes.
  8. Stir in the basil and season to taste with salt and pepper.
  9. Return the chicken to the skillet, nestling it among the tomatoes, and top with mozzarella.
  10. Cover until the cheese is melted, about 30 seconds.
