Caprese Chicken with Avocado

Ingredients

The chicken

  • 2 pieces boneless skinless chicken breasts
  • 2 Tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

The toppings

  • 6 oz fresh mozzarella
  • 4 slices avocado
  • 2 medium vine ripened tomatoes
  • 3 Tbsp balsamic glaze
  • cup chopped basil

Instructions

  1. Mix garlic powder, onion powder, Italian seasoning, salt, and pepper in a bowl.
  2. Dab chicken dry and sprinkle the seasoning mixture over both sides of each cutlet.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Add chicken and cook until golden brown on one side, about 4 to 6 minutes.
  5. Rotate chicken and cook the other side until nearly done, about 4 to 5 minutes.
  6. Top each cutlet with two slices of mozzarella, one avocado slice, and 1 to 2 tomato slices.
  7. Cover the pan and cook for an additional 1 to 2 minutes until cheese melts and chicken reaches 165°F.
  8. Sprinkle with pepper, drizzle with balsamic glaze, and garnish with fresh basil before serving.
