Instructions
- Prepare the walnut pesto by blending basil leaves, garlic cloves, and walnuts in a food processor, adding olive oil gradually until smooth. Stir in parmesan cheese, black pepper, salt, and garlic powder.
- Slice fresh mozzarella and tomatoes.
- Cut the chicken breast in half lengthwise and season both sides with Italian seasoning, black pepper, garlic powder, ground thyme, salt, and onion powder.
- Heat olive oil in a pan over medium-high heat and cook the chicken for 4 minutes on one side.
- Flip the chicken, layer with pesto, mozzarella, and tomato slices, cover, and cook for an additional 4 minutes.
- Remove from heat and drizzle with balsamic glaze before serving.
