Ingredients

The Chicken

  • 1 lb boneless chicken breast
  • 1 tsp Italian seasoning
  • 1 tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp ground thyme
  • ½ tsp Himalayan pink salt
  • ¼ tsp onion powder
  • 3 tbsp olive oil
  • 1 lb fresh mozzarella cheese
  • 1 medium tomato, thinly sliced
  • to taste balsamic glaze

Walnut Pesto

  • cup fresh basil leaves
  • cup walnuts, shelled
  • cup olive oil
  • cup grated parmesan cheese
  • 2 whole garlic cloves
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ¼ tsp Himalayan pink salt

Instructions

  1. Prepare the walnut pesto by blending basil leaves, garlic cloves, and walnuts in a food processor, adding olive oil gradually until smooth. Stir in parmesan cheese, black pepper, salt, and garlic powder.
  2. Slice fresh mozzarella and tomatoes.
  3. Cut the chicken breast in half lengthwise and season both sides with Italian seasoning, black pepper, garlic powder, ground thyme, salt, and onion powder.
  4. Heat olive oil in a pan over medium-high heat and cook the chicken for 4 minutes on one side.
  5. Flip the chicken, layer with pesto, mozzarella, and tomato slices, cover, and cook for an additional 4 minutes.
  6. Remove from heat and drizzle with balsamic glaze before serving.
