Ingredients

The salad

  • 1 piece boneless skinless chicken breast
  • to taste salt & pepper
  • ½ cup halved fresh mozzarella balls
  • 1 piece avocado, diced
  • 6 cups fresh spring mix salad
  • ½ cup halved cherry tomatoes
  • ¼ cup fresh diced basil

Balsamic Vinaigrette

  • 1 clove garlic, minced
  • 1 teaspoon dry basil
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • ¼ cup balsamic vinegar
  • ¼ cup olive oil
  • to taste salt & pepper

Instructions

  1. Prepare the balsamic vinaigrette by mixing garlic, dry basil, dijon mustard, lemon juice, balsamic vinegar, salt, and pepper in a small bowl. Gradually whisk in olive oil until well combined.
  2. Preheat the grill to medium-high heat. Season the chicken breast with salt and pepper, then grill for 5-6 minutes on each side until fully cooked.
  3. In a large bowl, combine the spring mix, diced avocado, cherry tomatoes, fresh basil, fresh mozzarella balls, and sliced grilled chicken.
  4. Drizzle the salad with the balsamic vinaigrette before serving.
